The olive groves of Chrysopigi Monastery include age-old olive trees of the Tsounati variety of an ancient olive olive variety and Koroneiki variety of olive trees of the most widespread variety for the production of olive oil. The fruits of the two varieties combine to give the unique extra virgin organic olive oil of the Monastery.

The cultivation of olives is organic without the use of chemical fertilizers and medicines, applying to the estates the traditional way of cultivating the land, with respect for the environment and the sanctity of Creation. Olive oil is characterized as fruity, it is particularly robust suitable for cooking and frying.
